These Strawberry Cream Popsicles are a dreamy combination of fresh strawberries, creamy yogurt and a touch of honey making them the perfect guilt free Valentine's Day treat. Naturally pink and heart meltingly delicious they’re easy to make and even easier to love.

Equipment

  • Blender or food processor
  • Popsicle molds
  • Popsicle sticks
  • Measuring cups and spoons
  • Small mixing bowl
  • Knife and cutting board

Ingredients

  • 2 cups fresh strawberries hulled and chopped
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup Greek yogurt plain or vanilla
  • 1/4 cup milk any kind, dairy or non-dairy
  • Optional: 1 tbsp lemon juice to enhance the strawberry flavor

Instructions

  • Prepare the strawberries:
  • Wash, hull, and chop the strawberries.
  • Blend the fruit layer:
  • In a blender, combine strawberries, honey, vanilla extract, and lemon juice (if using). Blend until smooth.
  • Mix the creamy layer:
  • In a small bowl, mix the Greek yogurt and milk until smooth. Add a little honey if you want it sweeter.
  • Layer the popsicles:
  • Pour spoonfuls of the strawberry mixture and yogurt mixture alternately into the popsicle molds. For a swirled effect, gently stir with a skewer or knife.
  • Insert sticks and freeze:
  • Place the popsicle sticks in and freeze for at least 6 hours or until completely solid.
  • Unmold and enjoy:
  • To easily remove the popsicles, run the molds under warm water for a few seconds. Serve immediately.
