Prepare the strawberries:
Wash, hull, and chop the strawberries.
Blend the fruit layer:
In a blender, combine strawberries, honey, vanilla extract, and lemon juice (if using). Blend until smooth.
Mix the creamy layer:
In a small bowl, mix the Greek yogurt and milk until smooth. Add a little honey if you want it sweeter.
Layer the popsicles:
Pour spoonfuls of the strawberry mixture and yogurt mixture alternately into the popsicle molds. For a swirled effect, gently stir with a skewer or knife.
Insert sticks and freeze:
Place the popsicle sticks in and freeze for at least 6 hours or until completely solid.
Unmold and enjoy:
To easily remove the popsicles, run the molds under warm water for a few seconds. Serve immediately.
